Blackberry Crumble Slices

Do you love blackberry crumble? It’s such a traditional dessert, and one that plenty of children grew up with in Britain - we certainly did! Crumble is always a Sunday afternoon dessert for us, it would just be sacrilege to have it on any other day… unless it was Sunday’s leftovers! But these little slices of blackberry crumble are so delicious and are made precisely so you can enjoy them any day of the week! So delectably sweet and fruity, these are a perfect treat for everyone, no matter the day!

Ingredients

380g plain flour

160g butter 

300g sugar

500g blackberries

½ tsp salt 

2 large eggs 

1 tsp vanilla paste

2 tbsp cornflour

1 tbsp lemon juice

Method

  1. Heat oven to 180°c degrees and line a 13x9” cake tin with parchment paper. 

  2. In a large mixing bowl, mix together 160g of the sugar with all of the flour.

  3. Cut the butter into small cubes and, using your fingers, gently rub the butter into the flour mix until it resembles fine breadcrumbs. 

  4. Next, add the eggs and use a fork to mix it all together until combined, then set aside. This will be the crumble mix.

  5. In another bowl, mix the blackberries, remaining sugar, vanilla, corn flour and lemon juice together until fully combined. 

  6. Evenly spread half of the crumble mix into the lined tin and smooth the top over.

  7. Pour on the blackberry mix and spread this evenly over the crumble mix.

  8. Finally, cover the blackberries with the remaining crumble mix and then place in the oven and bake for 25 minutes until golden.

  9. Leave to cool then slice.
