Jamaican Patties
It’s been snowing non-stop lately, so we thought we’d bring you something you can warm your hands up with! These beautifully crisp and deliciously spiced patties kept us all warmed up throughout the winter weather, but they’re also wonderful cold for a summer picnic. How would you like to eat them?
Ingredients
Pastry
250g Plain flour
115g butter – cold from the fridge
1tsp salt
1tsp Garam Masala
1 tsp Turmeric
Approx. 120ml iced water
Beef mince filling
500g Beef mince
1 Onion – chopped
1 red pepper – chopped
2 cloves garlic – minced
4 small spring onions – chopped
½ tsp chilli flakes – more or less to taste
1tsp salt
½ tsp ground black pepper
1 tsp paprika
1 ½ tsp Garam masala
1 tsp turmeric
1tsp dried thyme
1 tsp beef extract – you can substitute for a beef stock cube
200ml water
1tbsp vegetable oil for frying
1 beaten egg to glaze
Method
Chop the butter into small pieces and put with all the remaining pastry ingredients (except the water) into a food processor and blend quickly until it resembles fine breadcrumbs.
Slowly add the water until the pastry mix comes together to forms a soft dough, cover with clingfilm and place in the fridge for at least 40 minutes.
Heat the oil in a pan, add onion and cook till soft but not brown, add pepper, garlic and spring onion and cook gently for 4-5 minutes. Add minced beef and all the spices (turmeric, Garam masala, paprika, chilli flakes and thyme and cook for 3-4 minutes. Add the water and beef extract (or stock cube) and cook for a further 10 minutes stirring occasionally.
Season with salt and pepper and leave to cool.
Heat the oven to 190c
Divide the pastry into four pieces, roll each piece into an 18 – 20in disc) the pastry should be thin) Divide the minced beef mix equally between four and place in the middle of the pastry discs. Brush the edges of each disc with water, fold the pastry over and press the edges together, then crimp the edges with a fork.
Beat the egg and brush each Pattie with the egg, place on a baking tray lined with parchment paper.
Place in the pre heated oven and cook for 20 – 25 minutes until golden.
