Lamb Kofte
These lamb kofte are so reminiscent of summer and sunshine for us! We love them on the barbeque, sizzling away among the burgers and hotdogs. While we don’t often get the good weather here in England, if there’s even a hint of heat and sun, a barbeque is on everyone’s minds! Served with plenty of salad, a zesty tzatziki, and warm pitta bread these make a perfect addition to any occasion!
Ingredients
300g minced lamb
80g fresh breadcrumbs
1 small onion finely chopped
1 tbsp concentrated mint sauce
1 tbsp freshly chopped coriander
1 tsp cinnamon
1 tsp cumin
1 tsp turmeric
1 tsp minced garlic paste
½ tsp chilli powder
1 egg
Salt and freshly ground black pepper to taste
Olive oil for cooking
8-10 wooden skewers - pre-soaked in water for half an hour
Method
Place all the ingredients (except the olive oil) in a large bowl and combine using your hands until mixed well.
Divide mixture into 8 - 10 balls depending on the size you would like your kofte.
Insert a skewer into the centre of each ball then, with wet hands, gently press the mixture around the skewer to form the kofte shape and set aside.
Heat a griddle pan over a medium flame. Brush each kofte with a little olive oil and grill until they are golden brown on all sides.
Serve with a fresh salad, rice and wedges of lemon
