Soft Salted Caramel Cookies
Is there anything more decadent than salted caramel cookies? Yes! Salted caramel cookies and a salted caramel dalgona coffee! These cookies are deliciously sweet and soft and are just begging to be enjoyed with a tall glass of something, whether it’s milk or an iced coffee, it’s a match made in heaven. And trust us, you just can’t say no to a second one… or a third, or a fourth - someone take the plate away from me!
Ingredients
115g melted butter
165g light brown sugar
100g granulated sugar
1 large egg
160g plain flour
100g chocolate chips
½ tsp bicarbonate of soda
½ tsp baking powder
¾ tsp salt
1 tsp vanilla paste
Topping
4-6 tbsp caramel sauce
Sea salt flakes for sprinkling
Method
Line two baking trays with parchment paper.
Whisk together the melted butter and both the brown and white sugar until they are completely mixed and forms a paste. Add the egg and vanilla paste and whisk until combined.
Sift together the flour, baking powder and bicarbonate of soda and then fold into the butter mix, along with the salt and chocolate chips.
Chill in the fridge for 40 minutes.
Preheat the oven to 180°c.
Spoon the mixture evenly onto the two baking sheets – 6 per sheet.
Bake for 12 - 14 mins, or until they are lightly golden.
Remove from the oven and leave to cool for 5 minutes before placing on a cooling rack.
Drizzle with caramel and sprinkle with sea salt flakes.
