Greek Chicken Skewers

These chicken skewers are so delightfully fresh and zesty that they’re definitely a favourite in our household! We love having huge spreads here (if you haven’t guessed) and this is no exception. They’re a great alternative to the chicken shish kebab takeaways, and definitely a lot healthier! Served with homemade hummus, tzatziki and a tomato and olive salad, they’re a summery dish!

Ingredients

4 chicken breasts - cut into even bite sized chunks 2cm

Marinade

2 tbsp dried greek oregano 

4 tbsp olive oil

1 large lemon - grated zest and juice

4 cloves of garlic -  minced

½ tsp chilli flakes

½ tsp cracked black pepper ½ tsp salt

Method

  1. Mix all of the marinade ingredients thoroughly in a large bowl. Add the chicken pieces and mix well to ensure all the chicken is coated in the marinade. 

  2. Cover with cling film and place in the fridge for at least 1 hour, or can be left overnight.

  3. Remove the chicken from the fridge 30 minutes before cooking. Thread the chicken onto metal skewers (if you’re using wooden skewers, make sure to soak them in water for an hour before threading the chicken on)

  4. Heat a griddle tray on the hob until very hot - you can test this by splashing a few drops of water to the tray, it should sizzle and evaporate instantly!

  5. Place the chicken skewers onto the griddle and cook for 10 to 15 minutes, turning every 2 minutes until cooked through. You can cook the chicken on a barbecue, or even grill them if you prefer!

  6. Enjoy with grilled pita bread, salad and hummus!
