Cheesy French Onion Soup
So rich and warming, it’s easy to imagine eating his soup while curled up next to the fire on a cold, winter’s day. If you’ve tried French onion soup before, then you know just how comforting it can be. If you’ve yet to try it, then what are you waiting for??? With it’s floating, toasted French bread slice covered in delicious gooey cheese, this is the soup you’ve been waiting for. So get cooking!
Ingredients
50g butter
1 tbsp olive oil
1kg onion thinly chopped
4 garlic cloves, thinly sliced
2tsp plain flour
1tsp brown sugar
250ml dry white wine
1.5lt hot water
2 beef stock pots (concentrate)
1tbs beef extract
4-6 slices French bread
150g cheese
Method
Melt 50g butter with 1 tbsp olive oil in a large heavy based pan. Add onions and fry with the lid on for 10 mins until soft.
Sprinkle in 1 tsp sugar and cook for 20 mins more, stirring frequently, until caramelised. The onions should be really golden and soft.
Add 4 thinly sliced garlic cloves for the final few mins of the onions’ cooking time, then sprinkle in 2 tbsp plain flour and stir well.
Increase the heat and keep stirring as you gradually add 250ml dry white wine, followed by 1.5l hot water, beef stock pots and beef extract. Cover and simmer for 15-20 mins.
To serve, turn on the grill, and toast 4-8 slices French bread. Ladle the soup into heatproof bowls.
Put a slice or two of toast on top of the bowls of soup, and pile on the finely grated cheese. Grill until melted.
